This Cepas Viejas from Murviedro is made from Bobal, an original grape from the Valencia region. As the name suggests, this wine is made from 70 year old vines, with very low yield. It is an intense deep red wine. On the nose we find complex aromas of forest fruits, with hints of toffee and vanilla, and a little bit of balsamic notes. In the mouth it is a round wine, with a nice balance between the soft tannin, the fruit and the freshness. The aftertaste is long. This wine goes well with red meat and game, and hard cheeses. Do not serve it too warm (16 -18°C) and do not hesitate to decanter it half an hour in advance. Vinification: manual harvest, strict selection of the bunches. Fermentation in oak barrels of which the lid has been replaced by a stainless steel plate with temperature control. Further maturation of 10 months in French and American oak barriques.
