Klein Constantia Vin de Constance is a sweet wine from South Africa, and it is claimed to be the best sweet wine produced in the world. The estate is partly owned by Hubert de Bouard (Ch Angélus). The vineyard was planted by Simon van der Stel, the first governor of the Cape, in 1685. Constantia has been drunk by many great personalities throughout the centuries. The estate's aim is to create the most perfect sweet wine with the perfect balance of sweetness and freshness. To achieve this, the harvest is brought in in several stages over a period of two months. After a long fermentation, the wine is aged for three years in 50% new oak and acacia barrels and partly in large wooden “foudres”. It is then blended and bottled.
