Our hundred-year-old soleras bring an exceptional age to the sherry range. The most discerning palates agree: subtlety in its purest form.
Palo Cortados is one of the most special wines within the Jerez-Xérès-Sherry Designation of Origin. This is because, although the ageing process is a physical-chemical process of oxidative ageing similar to that of an oloroso, the result is not an oloroso, but rather its organoleptic characteristics place it between an amontillado and an oloroso.
We could say that our Palo Cortado Obispo Gascón is caught between two worlds, between biological and oxidative ageing.
