The grapes come from our own vineyards, located in the towns of Larraga and Oteiza, in the Navarre region. This area is known for its mild temperatures and moderate rainfall, ideal for the slow ripening of the grapes, leading to excellent polymerization of phenolic and aromatic compounds. The harvest is carried out at night, completely avoiding the oxidation of polyphenols and aromatic precursors of the grape. After a few days of cold maceration, the fermentation process begins. In it, pump-overs and delestages are carefully controlled, breaking the cap to extract the finest tannins, which give rise to the structure of this great wine. This wine undergoes a malolactic fermentation in combination with an alcoholic fermentation. Immediately after devating, the wine is stored in our French oak foudre, where it matures for fifteen months. This wine has a medium layer, retaining good color intensity and a beautiful cherry note after maturation.

The nose is characterized by the intensity of the aromas of ripe fruit, mainly black fruit (blackberry, cassis and plum). Spicy notes also stand out, which are combined with the flavors of roasted coffee and cocoa that integrate perfectly with the ripe fruit, giving this wine complexity, which also enhances the perfect blend that results from the blend of the two varieties. . Upon entering the mouth the result is a structured wine, but silky and fat, with well-polished tannins and a pronounced licorice aroma, which combines with the toasting and leather of the wood. The aftertaste in the mouth is long and persistent.
