This champagne derives its unique character from 100% Pinot Noir grapes from Aÿ, the only Grand Cru area in the Vallée de la Marne that offers a soft and fresh Pinot Noir, and from the hilly region of Verzenay in the Montagne de Reims, which provides intensity. A perfectly timed harvest ensures the optimal ripeness of the grapes used.
The composition is further enriched by a combination of maturation in stainless steel tanks (90%) and 228L oak barrels (10%), which adds to the complexity. The prolonged maturation on yeast and low alcohol content (7g/l) add even more character. The end result is a powerful, refined and generous 100% Pinot Noir champagne.
The aroma recognises ripe fruits such as peach and tangerine, followed by spring honey and a hint of pastry on the palate. It opens rich and intense with spice aromas and finishes with the deep, powerful signature of Pinot Noir from grand terroirs, complemented by grilled notes for a balanced finish.
