The grapes come from our own vineyards located in the central area of Navarra, especially in the Tierra Estella sub-area. This area is characterized by very mild temperatures and very moderate rainfall, which favors the slow ripening of the grapes. Thus they obtain the optimal degree and excellent polymerization of the phenolic and aromatic compounds, retaining some of the acidity that improves the freshness of this wine. These grapes were harvested at night to prevent all kinds of oxidation as much as possible. After several days of cold maceration, fermentation begins, which is closely controlled with special care when pumping over to extract the finest tannins that give rise to the structure this wine needs. Like the rest of our wines, malolactic fermentation is carried out in combination with alcoholic fermentation. When the wine is uncovered, it goes to French oak barrels, where it undergoes malolactic fermentation and completes its refinement for about 4 months. In this case, the oak barrels are medium toasted, as the purpose of this medium-aged wine is to preserve the fruity aroma of the wine and not the spiciness of aging.
Wine with a medium low color and cherry tint. On the nose it stands out for its complexity, from which the floral aromas and the intensity of the aroma of ripe red fruits (strawberry, cherry and blackberry) stand out. This aroma is provided by the behavior of the Merlot variety in a terroir like ours. In the mouth it stands out for its volume, completely filling the mouth, resulting in a sweet tooth due to its fruity taste with a pronounced licorice aftertaste, which makes it very pleasant and inviting to drink.
