The grapes come from our own vineyards, located in the center of Navarra, in the towns of Larraga and Oteiza. This region is known for its mild temperatures and moderate rainfall, ideal for the slow ripening of the grapes. These vineyards are non-irrigated non-irrigated farms, so the level of production is not high. This process produces grapes with more aromatic power. The grapes are harvested mechanically. It is then left to macerate at a temperature of 10ºC to promote the extraction of the aromatic compounds. After a few days, the alcoholic fermentation process begins, when selected lactic acid bacteria are also inoculated to simultaneously initiate malolactic fermentation (co-inoculation). We consider this new technique very positive, due to the final aromatic potential offered by a large amount of red fruits that maintain a high stable color index. This process produces a smoother wine that is available immediately after harvest, enhancing the absolute freshness of this wine.
This wine has a medium color layer, with intense purple hues, the result of the careful production technique. The nose is characterized by the intensity of ripe and sweet notes of red fruit, with an emphasis on strawberry and cherry. On the palate it is a wine with a soft and sweet taste, which fills the mouth little by little, giving rise to a pronounced fruity aftertaste. This wine is characterized as smooth and easy to consume.
