A wine with an intense color and violet reflections, on the nose its scent is enhanced by hints of fresh fruit, cherry with spicy notes that blend with great balance and elegance to those of sweet and vanilla expressed from wood. The taste is enveloping, silky, soft tannins, rich and persistent nish.
The harvest begins at the beginning of October when optimal maturity is reached. The grapes are harvested by hand in cassettes from the vineyards with controlled yield.
Upon reception in the cellar, a double sorting is carried out on sorting tables. Once on the full grapes, and after separating the bunches a second time on the grapes itself. Maceration and fermentation takes place in stainless steel 25 m3 vinifiers at a controlled temperature. Malolactic fermentation and aging for 10 months take place in French oak barrique barrels of 225l.
After bottling, the wine ages for another 3 months before being released on the market.
Melnik is a late-ripening grape variety, grown in small quantities exclusively in Bulgaria. The young wines are distinguished by their saturated cherry colour, intense aroma in which cherry notes dominate, sufficient depth and characteristic, spicy sourness. They develop very well in contact with oak. The mature wines from the Melnik grape stand out through a rich, complex aroma in which interesting notes of tobacco and leather can be felt. The flavour characterises itself with preserved freshness and gentle sourness. Melnik itself is said to have been Winston Churchill's favourite wine grape.
