Grape variety/vinification
This wine comes from different locations and is harvested at different maturity levels. Each location yields unique characteristics ranging from flint, to grass, green pepper to gooseberry as well as ripe tropical flavours. The grapes were harvested by machine in the cool, early mornings, starting at 02:00 to preserve the delicate flavours. Maceration occurs after 8-24 hours at 10°C. The juice settles overnight, then is crushed clean, inoculated with yeast and undergoes fermentation for up to 30 days at temperatures between 11°C - 13°C.
Tasting note
This wine contains aromas of fresh lime zest, elderflower, freshly cut grass and sweet paprika, while retaining the distinctive minerality that comes from the Steenberg terroir. Grown under a cool climate, this Sauvignon has acidity that keeps it lively and fresh on the palate with aromas of gooseberry and green melon. All the elements allow it to age well for the next 2-5 years.
Wine/food
This wine goes well with white meat and fresh fish. It is delicious with dishes with green herbs and that are lightly spiced.
