The third spirit we have created is a Falernum. Our Falernum goes back to the roots of Falernum. Falernum (pronounced fah-learn-um) is a sweet syrup used in Caribbean and tropical drinks. It contains flavours of almond, chilli, ginger and/or clove and lime. It is used in cocktails in a manner similar to orgeate syrup or can be drunk with ice. Some reports date the origins of falernum back to the 18th century. In the literary journal All the Year Round, then owned by Charles Dickens, Jr. an unnamed author wrote about falernum in 1892, describing it as ‘a curious liqueur composed of rum and lime juice’.
