About the winery Founded in 1892, Domaines Paul Mas today tells the story of owner Jean-Claude Mas, who pioneered the revival of the Languedoc as a region for quality wines. Jean-Claude characterizes his wines as 'Le Luxe Rural', rural luxury. He has given the Languedoc 'new world' allure with international grape varieties. And with his fashionable wines from local grapes, he has made the local character of the Languedoc hip again among wine lovers. The 'Mon' series is bottled in a highly recognizable, striking 'flûte gothique' bottle, which was invented by two French students in the annual glass competition 'Formes de Luxe Awards 2022' by glass manufacturer Verallia. Domaines Paul Mas may use these bottles exclusively. Vineyard and region Sourced from several vineyards in the Languedoc at an altitude of 100-180 meters. The soils consist of clay and limestone. The vines are on average about 20 years old. Vinification The grapes are first destemmed and then fermented in stainless steel and concrete tanks for 4 days. After fermentation, the juice remains with the peels for another 10 days for extra flavor extraction. 25% of the wine matures for 5 months in American (80%) and French (20%) oak barrels. Color Bright red with a purple glow. Scent Black cherries, blackberries and plums. Currants, tobacco and laurel. Taste Fruity and sunny, warm character. Spicy. Serve with Delicious with slowly cooked lamb with eggplant.
