Palo Cortados is one of the most special wines within the Jerez-Xérès-Sherry Designation of Origin. This is because, although the ageing process is a physical-chemical process of oxidative ageing similar to that of an oloroso, the result is not an oloroso, but rather its organoleptic characteristics place it between an amontillado and an oloroso.
