Palo Cortados is one of the most special wines within the Designation of Origin Jerez-Xérès-Sherry. This is because, although the elaboration process is a physical-chemical process of oxidative ageing like that of an oloroso, the result is not an oloroso, but its organoleptic characteristics place it between an amontillado and an oloroso.
