Chardonnay.

Vineyard:

The vines are located at the foot of the rocky spurs of Solutré and Vergisson. They are at least 45 years old.

Soils:

Jurassic clay-limestone soils.

Harvest:

Mechanical harvesting when the grapes are fully ripe.

Vinification:

Vinification in vats, careful stirring, long, meticulous and particularly careful ageing. There may be a slight natural deposit in the bottle as the wine undergoes only light filtration before bottling.

Ageing:

Part of the cuvée (30%) is aged in French oak barrels for 12 months and then blended with the rest in vats for a further 6 months of ageing.

Tasting notes:

The colour is golden, intense and delicate. The nose combines aromas of fruit (peaches, pears) and white flowers (acacia, honeysuckle). On the palate, richness,

creaminess and elegant freshness are in perfect balance.

Food and wine pairings:

The flattering attack, resulting from partial ageing in wood, suggests noble fish dishes (salmon, monkfish) and poultry (capon).
