Deep amber. Leather, plums, redcurrants and malted barley emerge, followed by toasty oak and hints of cinnamon, green apple and black pepper. Waves of smoke and striking red fruit follow, complemented by grain notes of malt and porridge. The peat smoke is dry and brooding, with hints of burnt heather and subtle pipe tobacco from the oak. The influence of European oak cannot be missed, with a touch of dryness balanced with the vibrancy of wood spices, smoked oak and roasted coffee. Barbecue sweetness and a touch of black pepper are complemented by rich fruitcake and dried fruit. A drop of water opens up the smoke and fruity sweetness from the wine barrels, creating a wonderful balance as notes of apple and pear grow with the dram. Smoked malt, smouldering oak and sea salt settle into the finish, while Octomore's signature earthy smoke lingers.
