Jack Daniel's Bonded has matured in specially hollowed barrels that expose the whiskey to greater interaction with the wood and give it an intense character. Bottled at 50°, it offers soft caramel and oak notes, which slowly give way to an intense spicy aftertaste.
This method is also called 'Bottled-in-Bond'. The law (1897) states that whiskey:
Must come from a single distillery
Produced in one distillation season
Bottled at 50°
Aged for a minimum of 4 years in a federal warehouse
