This particular type of wine is obtained by a traditional technique that some trace back to the ancient Greeks (4th century B.C.), a technique then handed down through the millennia to the present day. A product of ancient peasant tradition and preserved for special occasions (such as births and weddings), vino-cotto has recently found new and old followers. A recent study highlighted the high antioxidant power this product has, due to the caramelisation process of the sugar.
The must freshly obtained from the pressing of white grapes is poured into a large copper cauldron placed to boil directly on a support under which a fire is fed, which must be lively and slow for the must to come to the boil. Boiling reduces the quantity to 1/3 of the initial volume through the loss of water. The concentrated wort thus obtained is left to cool in steel containers. It is then mixed with 2/3 of the must and poured into barrels where slow fermentation takes place.
