Terroir
The ROCANS plot is a locality a few kilometers from the Domaine, on the Côtes, slightly elevated with red colored soils, safres, i.e. sandstones made up of quartz grain (assemblage of atoms of silica) cemented together by limestone.
Winemaking
Traditional vinification in destemmed concrete vats, maceration for one month before devatting and pumping over throughout fermentation. We let's look for infusion rather than extraction in order to bring lightness and flexibility. After devatting we age ROCANS for 8 months in truncated conical wooden vats.
Tasting
Rather shy wine at the opening, then it reveals all its personality to us, aromatic framework ranging from fresh fruits to black fruits and spices, a mineral freshness and very fine and silky tannins. Aging in vats truncated conical wood brings flexibility and fullness in the mouth. It is a wine about delicacy and elegance.
