About the winery Founded in 1892, Domaines Paul Mas today tells the story of owner Jean-Claude Mas, who pioneered the revival of the Languedoc as a region for quality wines. Jean-Claude characterizes his wines as 'Le Luxe Rural', rural luxury. He has given the Languedoc 'new world' allure with international grape varieties. And with his fashionable wines from local grapes, he has made the local character of the Languedoc hip again among wine lovers. The 'Mon' series is bottled in a highly recognizable, striking 'flûte gothique' bottle, which was invented by two French students in the annual glass competition 'Formes de Luxe Awards 2022' by glass manufacturer Verallia. Domaines Paul Mas may use these bottles exclusively. Vineyard and region Sourced from several vineyards in the Languedoc at an altitude of 20-100 meters. The soils consist of clay and limestone. The vines are on average about 12-20 years old. Vinification After harvest, the grapes are destemmed and pressed. The juice is fermented at a controlled temperature of a maximum of 18 degrees, 70% in stainless steel and 30% in oak barrels. The fermentation takes 20 days. Part of the wine undergoes a malolactic fermentation, where the acids are converted into a rounder type of acids. The wine matures for another 3 months on its yeast cells for extra creaminess and complexity. Color Golden yellow. Scent Dried fruit (apricots), flowers (orange blossom) and acacia honey. Taste Fruity and creamy, with good freshness and soft notes of toast. Serve with Delicious with roasted cauliflower with a blue cheese sauce. Oriental food.
