About the winery Founded in 1892, Domaines Paul Mas today tells the story of owner Jean-Claude Mas, who pioneered the revival of the Languedoc as a region for quality wines. Jean-Claude characterizes his wines as 'Le Luxe Rural', rural luxury. He has given the Languedoc 'new world' allure with international grape varieties. And with his fashionable wines from local grapes, he has made the local character of the Languedoc hip again among wine lovers. The 'Mon' series is bottled in a highly recognizable, striking 'flûte gothique' bottle, which was invented by two French students in the annual glass competition 'Formes de Luxe Awards 2022' by glass manufacturer Verallia. Domaines Paul Mas may use these bottles exclusively. Vineyard and region Sourced from several vineyards in the Languedoc at an altitude of 50-120 meters. The soils consist of clay and limestone and contain fossils. The vines are on average about 8-25 years old. Vinification After harvesting, the grapes are immediately destemmed. Each grape variety is given a short skin maceration (to extract color) and is pressed and fermented separately at a temperature of 17 degrees. The wine matures for 40 days in cement tanks on the yeast cells, which provide extra creaminess and complexity. Color Light pink. Fragrance Elegant scent of flowers, peach and a hint of eucalyptus. Taste Soft and full with notes of cherries and raspberries and some mint. Serve at Delicious with a shrimp skewer or with a veal tartare with hazelnuts.
