Crush immediately. The temperature is regularly checked during fermentation and maceration in stainless steel tanks for 7/8 days. The wine is aged and aged in barrels for about 6/8 months. the type of barrels we use depends on the vintage year. The wine is transferred to bottles for several months, where it can express all the elegance of this grape variety. Located in the heart of the Langhe, on the hills of the municipality of Barolo, the company takes its name from the toponym, both unique and ancient "BRIC CENCIURIO" or: top of the Cenciurio hill. The vinification method is aimed at respecting the raw material from which the wine comes, an attempt is made to interpret each vineyard individually by carefully monitoring the ripening of the bunches. The technology is accompanied by traditional methodologies such as following the phases of the moon during the bottling of the wines. The harvest is done exclusively by hand to carefully select the best bunches.
