About the winery Punctum literally means 'the intersection'. The winery is located in Las Pedroñeras, at the intersection of the cities of Cuenca, Ciudad Real and Albacete. It was founded in 2005 by the Fernández Cifuentes family. Punctum is now the most awarded organic winery in Spain with modern wines including Tempranillo and Graciano and a range of international grape varieties, both well-known (Chardonnay and Cabernet Sauvignon) and surprising (Viognier and Petit Verdot). Vineyard and region Sourced from two biodynamic Demeter certified vineyards, Finca el Fabián and Las Pedroñeras, in La Mancha, Spain. The vines are 10 years old. It is hot in summer and cool in winter in La Mancha, which makes the area very suitable for biodynamic viticulture. Vinification The grapes are fermented at a controlled temperature of 24 to 27 degrees in stainless steel tanks. The wine then undergoes maturation in oak for two months. Color Dark ruby red. Smell Ripe dark fruit, such as blackberries and plums, combined with herbs and vanilla. Taste Smooth wine with soft tannins, black fruit (plums, blackberries) and a long aftertaste. Serve with Delicious with roast roast beef with baked potatoes.
