Before being bottled, this unique gin matures for four months in French, medium-roasted oak barrels (300l) from Limousin, France. These barrels were originally used for the manufacture of cognac. Barrel maturation softens the citrus notes in the gin and enhances the rounder, finer notes. A hint of vanilla and the aroma of flowers and licorice also emerge. On the banks of the Leie, in the picturesque Bachte-Maria-Leerne in Belgium, hidden among the vast meadows and grain fields, Filliers Distillery has been making premium spirits such as grain gins, fruit gins, gin, whiskey and vodka since 1880. The traditional distilling process at Filliers in traditional copper alembic (stilling flasks) is a very delicate balancing act in which the craftsmanship and years of experience of 5 generations of master distillers play a major role.
