Montes Claros with the designation "Garrafeira" is made from a previous selection of old vines installed in slate soils, with strict control of grape production per hectare and monitoring of the evolution of ripening in each variety and specific plot. This process mainly involved the affiliated wine growers, who took the utmost care to produce grapes of extra quality. Upon arrival at the winery, the grapes were gently crushed with complete destemming, followed by the alcoholic fermentation process in stainless steel presses, with moderate mechanical handling, ending with maceration for 10 days, under temperature control at 24ºC. Malolactic fermentation took place in French, American and brown oak barrels before first use, followed by 12 months of aging in the same barrels. After light filtration, Clear appearance and garnet color with depth. Good aromatic intensity, emphasizing notes of red fruit in jam, coffee, chocolate and spices. Soft taste, with fruity freshness, excellent structure, slightly spicy and roasted astringency, with wild tannins, but supple and full of flavor. Very long oily finish, with balance, elegance and perseverance.
