This Poire Williams eau de vie is created by the natural fermentation of fresh Williams Bon Chrétien pears from Switzerland and from Italy. They are then distilled in our copper stills. The resulting distillate then matures for at least two years on stainless steel vats.

In 1997, shortly after the launch of Biercée's eau de vie Poire Williams, this liqueur already caught the eye of experts and amateurs. They welcomed its strength and revived character. At that time, the liqueur did not yet wear its ‘N°1’. It was in 1998, following the first award, that our master distillers, proud with their first trophy, decided to adapt the name.

Indeed, back in May 1998, Biercée's eau de vie Poire Williams was awarded at a comparative blind test organised by the Meurice Institute in Brussels. Eight wine and spirits professionals designated this Poire Williams eau de vie as the best out of 16 European Poire Williams eaux de vie. Proud of this recognition by their peers, our master distillers immediately decided to rename the drink ‘Poire Williams N°1’ from now on.
