The grapes come from our own vineyards, which are located in the central area of Navarra, especially in the Tierra Estella sub-area. This area is characterized by very mild temperatures and very moderate rainfall, which favors the slow ripening of the grapes. Thus they obtain the optimal degree and excellent polymerization of the phenolic and aromatic compounds, retaining some of the acidity that improves the freshness and longevity of this wine. The harvest is carried out at night to avoid as much as possible the oxidation of the polyphenols and aromatic precursors of the grape. After several days of cold maceration, fermentation begins, which is controlled with special care during pumping, breaking the cap daily to extract the finest tannins that give rise to the structure of this great wine. Malolactic fermentation occurs in combination with alcoholic fermentation. After discovering the wine, it goes to French oak barrels and completes its refinement up to 12 months of aging.
Wine with a medium color layer and an elegant cherry note. On the nose it stands out for its harmony between fruit and wood, with a predominance of ripe black fruit (berries, blueberries and cherries) and the spicy touch of French oak, with hints of leather, smoked and roasted. On the palate it is oily, oily, with very polished tannins and a pronounced licorice aftertaste. Overall, it is a wine that harmonizes toasted and spicy notes of French wood with ripe fruit, both on the nose and in the mouth. The end is long.
