After manual harvest, the grapes are destemmed and crushed. There follows a pre-fermentative maceration in a wine press for 24 hours and fermentation at a controlled temperature of 25°C to achieve good extraction of colour and tannin. Malolactic fermentation to stabilise and balance the wine. A wine that can accompany both traditional and modern cuisine. Delicious with strongly spiced red meat dishes as well as the richer white meat dishes
Herdade dos Arrochais is a family estate located in Amareleja, in central Alentejo.
After taking over in 1990, the patriarch of the family's passion and dedication to the land and hunting led him to invest all his personal and patrimonial resources in the restoration of the estate's soil, flora and fauna, as well as in the exemplary rehabilitation of the agricultural land with a view to restoring its productive capacity and quality. The family is very close to nature. So the soil has been ‘revived’, the land has been reforested and wildlife has been cared for, some of which can be found in the labels. Wine is grown here up to 1,500 metres above sea level.
