Clear appearance with pale yellow tones. Intense and complex with tropical fruit, citrus and anise. The palate is rich in complexity and persistent aromas, good length in the mouth, great broad and wonderfully drinkable character with a clear salinity edge.
FOOD AND WINE PAIRING Smoked fish, sea bass in salt crust, chicken with morel mushrooms, roast veal. Connoisseurs will enjoy it as an aperitif with some matured goat cheeses.
Mechanical harvesting with sorting on board. • Vinification per plot • Stainless steel barrels and underground concrete tanks. • Fermentation between 18-20°C. • Alcoholic fermentation started by indigenous yeasts selected in our own vineyards: an authentic vinification in accordance with the traditional respect of the terroir. • 10 months aging on the lees. • Mixing the different barrels to get the most out of the barrel complementarity of the plots.
