Low yields per hectare and fruit with enormous concentration. Large differences in day and night temperatures (up to 20 degrees) result in enormous freshness and vibrancy. And Martin turns that into a delicious Cinsault. Hand picked, 100% whole bunch cold fermented for 7 days, no extraction. Three months “on the lees”, no wood and immediately bottled. Flavors of raspberry, cherry and pomegranate. Drink chilled, preferably 12-14 degrees.
