Grape varieties and vinification
This wine is made from Chardonnay grapes.
The grapes for this wine come from the Colchagua valley. The soil contains granite with clay and silt which give the wine elegance and a slightly mineral tone. The climate is a semi-arid coastal climate with a strong influence of the Pacific Ocean and the Rapel River.
The grapes were harvested by machine at night and pressed into whole bunches as soon as they arrived at the winery. The juice obtained from gentle pressing was fermented separately in stainless steel tanks. 25% of the juice underwent oak contact fermentation and rested on its fine yeast cells for 6 months, after which the wine was bottled.
Tasting note
A bright yellow colour with aromas of white fruits like pear, quince and peach, accompanied by tropical fruits like pineapple and melon, as well as floral notes of acacia and jasmine complemented by a subtle hint of toasted oak. The creamy and soft palette has intense fruit flavours with a complex, lingering finish and a very good balance between fruit and oak.
Wine/food
This wine goes very well with vegetarian dishes, white meat such as chicken, turkey and pork with cream sauces, smoked and grilled fish, fried seafood, Indian dishes and Baba Ganoush.
