Grape varieties and vinification
This wine is made mostly from Carmenère, supplemented by a small proportion of Cabernet Sauvignon and Petit Verdot. The grapes undergo a 6-day maceration at a temperature of 10°C , followed by fermentation at a temperature of 24-26°C to preserve the fruity aromas. The wine then rests on the skins for 15 days to create more volume and density. The wine then ages for 14-16 months in French and American barrels, and a further 6 months in bottle.
Tasting note
This beautiful violet to ruby red Sutil Carmenère gives a promising preview of the Colchagua Valley. The nose stands out for its notes of ripe red and black fruit along with a delicate note of caramel and black pepper. The palette has soft ripe tannins combined with a very pleasant freshness and a wonderfully long finish.
Wine/food
This wine is delicious with various types of meat, such as beef, lamb and pork. The wine also goes very well with vegetables like mushrooms and aubergine, as well as strong yellow cheeses.
