The grapes come from our own vineyards, located in the central area of Navarra, especially in Larraga. This region is known for its mild temperatures and moderate rainfall, ideal for the slow ripening of the grapes. These vineyards are non-irrigated dry lands, therefore the level of production is not high, allowing us to obtain good ripening. This process produces grapes with more aromatic power. The harvest is carried out at night, completely avoiding the oxidation of polyphenols and aromatic precursors of the grape. After careful cleaning of the must, carried out using flotation techniques, fermentation begins in egg-shaped tanks. These special biodynamic deposits keep the lees in suspension, creating more volume and fat in the mouth. Controlled fermentation at temperatures of 12 to 14º C promotes the extraction of aromas. This wine has a very clear and bright appearance, with golden notes characteristic of these varieties. The nose is characterized by the complexity of its fruity notes, which emphasize the aromas of pome fruit such as green apple and pear, and a certain memory of stone fruit, peach and apricot. In the mouth the volume is striking, where the acidity is fully integrated. The sweet notes make this wine intense and pleasant, with a lingering tropical aftertaste.
