Grape varieties and vinification
This wine is made from Carmenère grapes. The grapes underwent maceration for 72 hours at a temperature of 10ºC, followed by fermentation for 10 days at a temperature of 24ºC to avoid pronounced tannins. After this, the wine rested on its skins for 15 days. The wine finally matures for another 12 months in French and American oak barrels and another 6 months in bottle.
Tasting note
This beautiful violet to ruby red Sutil Carmenère shows wonderfully fruity aromas of blackcurrant, cherry and plum with the spicy hints of mocha and coffee, which develop during aging in French and American oak. The palette is beautifully balanced with character, volume and structure.
Wine/food
This wine is delicious with various types of meat, such as beef, lamb and pork. The wine also goes very well with vegetables such as mushrooms and aubergine, as well as strong yellow cheeses.
